I went through this last month. It was a nightmare. They asked for utility bills from more than 3 months ago, which was impossible. I ended up calling customer support and they walked me through exactly which documents were acceptable. Be persistent!

Short answer: You usually can't bypass it. It's AML (Anti-Money Laundering) law, and they have to comply. If they are making it unnecessarily hard, you should complain to the UK Gambling Commission.
