I've been trying to perfect homemade mozzarella sticks for parties, but I keep running into the same problem. They either soak up too much oil and taste greasy, or they get soft and lose their structural integrity when I try to dip them. I've tried deep frying them and also baking them, but neither method gives me that perfect crispy exterior and gooey center I'm aiming for. Does anyone have a secret trick for the breading or the frying temperature that really makes a difference? I want them to be crunchy all the way through, not just crispy on the outside and mushy inside.

You absolutely must use a breading mixture that includes cornstarch. It helps create a crisp barrier that prevents the cheese from leaking oil into the frying bath.

I found that the oil temperature is everything. Keep it steady at 350 degrees Fahrenheit. If it's too low, they soak up oil; too high, they burn before the cheese melts.

Forget deep frying entirely. Try an air fryer. You spray them lightly with oil and cook them at 375 degrees for about 10 minutes. They come out perfectly crispy and much less oily.

I totally agree about the oil temperature. I used to fry them at 325 degrees and they were always greasy. I switched to 375 degrees and the difference was night and day. It really sealed the deal for me.

Replying to the temperature point: I also found that if you let the sticks sit for 15 minutes after breading, they get a better adhesion. Don't rush the process!

I think the problem is the moisture. You need to pat the sticks completely dry after dipping them in the egg wash. Any residual liquid will cause the breading to fall off or soak up oil.
