I'm planning a major annual conference for about 300 people next fall, and I'm trying to source a reliable catering service. I heard some great things about Vanessa Cater's menu variety, especially for dietary restrictions. Has anyone hired her before, particularly for a large-scale professional event? I'm most concerned about their ability to handle logistics, like setup time and maintaining quality across multiple stations. I had a massive gala, maybe 400 people. The menu was incredible, but logistics were a nightmare. They needed a dedicated site manager on site, not just kitchen staff. Be prepared to manage the setup yourself. It was beautiful food, though, so maybe worth the headache.

I found them quite expensive for the sheer number of people. We had to scale back some of the fancy stations just to stay within budget. Maybe look at a few other options first.

Regarding setup time, they are very punctual. They arrived early and were efficient. I'd say they handle the logistics better than most corporate vendors I've dealt with. Just confirm the setup timeline in writing.

They are professional, but definitely require a substantial deposit upfront. I wouldn't advise booking them until you've seen their full corporate portfolio.

They are excellent for variety. I loved the international spread. My only gripe was that the flow between stations felt a little disorganized when everyone hit them at once.

The minimum booking size is negotiable, but for 300 people, you are definitely in their sweet spot. I wouldn't worry about that.
