You should check out the tables at the Fontainebleau. It's huge, but the dedicated gaming areas are well-separated and the dealers are highly skilled. I found the service much better than what I experienced a few years ago at a competitor's property.

I went to both the MGM and the Fontainebleau last month. The MGM was great for sheer volume and energy, but the Fontainebleau had a much more focused, almost exclusive feel to its gaming floor. The tables were spaced out better, and the staff seemed genuinely interested in the game, not just the spending. For a pure dice experience, I think the Fontainebleau edges it out, even if it's pricier.
